Traditions that carry the taste of centuries
A part of this identity is reflected in dishes still prepared according to traditional recipes – without simply being stuck in nostalgia.
Carne Salada is a good example: For the production of this culinary classic, only high-quality, lean beef is used. It is marinated in large pieces with salt, bay leaves, black pepper, juniper berries, crushed garlic cloves, and rosemary. Numerous secret recipes exist, which are kept as family secrets. Once, the meat was stored in wooden or stone containers, today it is stored in stainless steel containers – it is only ready to eat after 25 days. Carne Salada then appears as a tender carpaccio classic, grilled or steamed hot on the plate. Few ingredients, a lot of patience – in the region, such culinary rituals are celebrated. The tradition dates back to the 15th century and was once used to preserve meat that could not be consumed immediately.

„Canederli“, also bread dumplings with sausage, bacon, or cheese – served with melted butter and alpine cheese or Parmesan. Here, we once again see the connection between the Alps and the Adriatic: a dish that originated from leftovers and is now considered true soul food. Strangolapreti – small bread-spinach dumplings – function similarly: rustic, simple, and wonderfully aromatic. The name actually means "priest's stranglers," because the clergy were so enthusiastic about the dish that they consumed it far too quickly.
Orzotto al Broccolo di Torbole showcases the refined side of Trentino. Risotto, but with barley, as the Romans also ate. Vegetables, but one that only grows here. At first glance, you might mistake the Broccolo di Torbole for cauliflower, as it is colored a pale yellow, not green. But you would be doing this local specialty a disservice. It needs the special wind of the region, which keeps the cold away from the delicate flower heads and gives the broccoli its delicate sweetness. Not only the head is edible, but also the leaves, which can grow up to 60 centimeters long. A citizens' committee takes care of preserving the variety. If you are in Torbole in mid-December, you will experience the annual Broccoli Festival, where the plant becomes a culinary star.

Slow Food in the Garda Trentino: Living Agro-Biodiversity on Your Plate
Valued regional products, such as Torbole broccoli, are included in the Slow Food Ark of Taste. This means a combination of rare varieties, traditional recipes, and the people who preserve them.
Campi Chestnut is one of these botanical personalities. Chestnuts with a light streaking, sweet, and diverse. Around 1500 trees grow in the valley of Riva del Garda – some of them are over 500 years old. The chestnuts are roasted, there are cakes made from their flour, and even a salted chestnut puree that was once eaten with cured meat.
DOP Garda Trentino Olive Oil enjoys an excellent reputation among connoisseurs and has been repeatedly awarded international prizes. It is produced in the olive groves of the "Busa", a plain between Riva, Arco and Torbole, evenly distributed throughout the landscape. The Romans already brought olive cultivation to the shores of Lake Garda, realizing that the trees would thrive equally well as in Mediterranean regions due to the mild climate. Very little has changed for centuries: the mostly small plots with their terraces and dry stone walls are still painstakingly cultivated by local families by hand. However, in the second half of the 19th century, a quality leap occurred in the local oil from the northernmost olive-growing area of Europe, largely thanks to Carlo Hugues. The farmer advocated for innovations such as early harvesting at the beginning of the ripening period, immediate processing of the fresh fruit, and cold pressing. Today, these measures are standard methods of modern olive processing.

Cold-pressed oils harmoniously blend light- to medium-bodied and grassy notes, with aromas of almond, artichoke, and herbs.
Pan de Molche, a waste product from olive oil production is used. "Molche" refers to the olive pulp, i.e. the pomace, in the Trentino dialect, which is mixed with flour, yeast, water, milk, and oil to form a dough and baked into a traditional bread – in the best sense of the word, sustainable.

Vino Santo Trentino DOC is produced, a sweet wine made from the indigenous Nosiola grape variety. The grapes are dried for months on wooden racks in the attics, while the "Ora del Garda" – a constant wind from the lake – provides the perfect ventilation. A wine that is rarely produced, as international varieties are more commonly cultivated – and that is precisely why it is a jewel.

Enantio Grapevine, which Pliny the Elder also described, is already quite old. A wild, resilient grape variety that requires very little plant protection. Its wine is dark, full-bodied, with elegant tannins – and a beautiful example of how sustainable viticulture can work.
